Chewy Flour Tortillas
• 2 cups flour
• 1 ½ teaspoons baking powder
• 1 teaspoon salt
• 2 teaspoons vegetable oil
• ¾ cup lukewarm milk
Stir together flour and baking powder in a bowl. Add salt and oil to milk and gradually add milk to flour. Turn the dough on a floured surface for two minutes.
Let the dough rest for 15 minutes. Divide into 8 balls and let rest for 20 minutes. Avoid letting the balls touch.
Dust floured surface and pat one a t a time into a 5” circle. Roll from center out until you have a 7” or 8” circle that is less than a 1/4” thick. Fry for about 30 seconds in a frying pan, flip and fry for another 30 seconds. Keep in a napkin-lined basket covered with foil.
