Double Carrot Salad

ダブルにんじんサラダ (Double Carrot Salad)

1 carrot (Japanese sized – short and fat)

2 tbsp rice vinegar

1 1/2 tbsp salad oil

1/4 tsp salt (I used a couple of grinds of my salt grinder)

1/4 tsp sugar ( I used two pinches)

Dash of pepper

Peel the carrot and grate 3-4cm (5-6cm for North American carrots) with the ginger/daikon grater (very fine). Cut the rest into 4-5cm long thin sticks. Sprinkle the sticks with salt and set aside for five minutes. Mix the vinegar, oil, salt, sugar and grated carrot together. Pour over carrot sticks, toss and serve.
