Fettuccini with Creamy Tomato Italian Sausage Sauce Recipe

Fettuccini with Creamy Tomato Italian Sausage Sauce Recipe

2 Tbsp olive oil
3 shallots, chopped
2 large garlic cloves, chopped
1/2 pound sweet Italian sausage, casings removed
1/2 pound spicy or hot Italian sausage, casings removed
1 cup whipping cream
2 14.5-ounce cans diced tomatoes in juice
1 Tbsp dried sage
3/4 pound fettuccine

1/2 cup grated Parmesan cheese

1 Heat oil in heavy large pot over medium-high heat. Add shallots and garlic and sauté until beginning to soften, about 3 minutes. Add sausages and sauté until no longer pink, breaking up the sausages a bit, about 5 minutes. Add cream; simmer 5 minutes. Add tomatoes with juices. Add sage. Simmer until sauce thickens, stirring occasionally, about 15 minutes.

2 Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta, reserving 1/2 cup cooking liquid.

3 Return pasta to same pot; add sauce. Toss over medium heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is dry. Season with salt and pepper. Transfer to bowl; sprinkle with cheese and serve.

Serves 6.

Broccoli Pasta Sauce

Broccoli Pasta Sauce

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4

Ingredients
280g (10oz) broccoli
2cm (1 inch) piece root ginger
3 tbsp olive oil
175g (6oz) shelled peas
150g (5fl oz) single cream
100g (4oz) ricotta cheese
salt and pepper

Instructions
1. Break the broccoli into small florets and finely slice the stems.

2. Grate the root ginger and fry with the broccoli for 5 minutes, stirring frequently.

3. Add the peas and continue to cook for 5 minutes.

4. Stir in the cream and cook gently for a further 5 minutes.

5. Add the ricotta cheese and season with salt and pepper.

Norma's Peanut Sauce

Norma's Peanut Sauce
(enough for 1.5 lbs of pasta)

1 cup peanut butter
3/4 cup light soy sauce
1/2 cup hot bouillon
2 Tbs lemon juice or vinegar
2 Tbs honey or sugar
2 Tbs chopped ginger
2 Tbs chopped garlic
1 Tbs Sesame oil
1 Tbs cornstarch
1/2 tsp chili paste or sambal (or simply cayenne pepper if that's all you've got)

Mix everything in a saucepan and heat for two minutes.

Serving suggestions: Sauté a ton of veggies (corn, bell peppers, broccoli, toasted sesame seeds... I like Chinese cabbage) and add to the sauce, and serve over pasta or potatoes.
