• 10 ripe tomatoes on the small side
• 125g mozzarella cheese
• 50mL olive oil
• A bunch or basil leaves, torn
• Sea salt and fresh ground pepper
1.Preheat the oven to 325°F
2.Cut a deep cross to about halfway down in the top of each tomato and push a piece of mozzarella.
3.Transfer to the baking sheet and sprinkle with salt and pepper
4.Cook in preheated oven for 25min until the tomatoes are beginning to soften and open up.
5.Sprinkle with olive oil and basil leaves and serve warm.
